Delicious French Brioches

This is an easy French recipe for individual mouthwatering brioches. They are delicious with a spoonful or two of jam and coffee or tea.


Ingredients

Serves 8

1 tbsp active dry yeast
1 tbsp caster sugar
2 tbsp warm milk
2 eggs
about 220 g plain flour
1/2 tbs salt
85 g butter, cut into pieces
1 egg yolk beaten with 2 tsp water,
for glazing


1. Lightly butter eight individual brioche tins or muffin tins. Put the yeast and sugar in a small bowl, add the milk and stir until dissolved. Leave to stand for about 5 minutes until foamy, then beat in the eggs.

2. Put the flour and salt into a food processor fitted with the metal blade, then with the machine running, pour in the yeast mixture. Scrape down the sides and continue processing for about 2-3 minutes, or until the dough forms a ball. add the butter and pulse about 10 times, or until the butter is incorporated.

3. Transfer the dough to a lightly buttered bowl and cover with a cloth. Set aside to rise in a warm place for about 1 hour until doubled in size, then punch down.

4. Set aside one quarter of the dough. Shape the remaining dough into eight balls, using your hands, and put into the prepared tins. Shape the reserved dough into eight smaller balls, then make a depression in the top of each large ball and set a small ball into it for the topknots.

5. Cover the brioches with a cloth and allow to rise in a warm place for about 30 minutes until doubled in size. Preheat the oven to 200°C.

6. Brush the brioches lightly with the egg glaze and bake them in the oven for 15-18 minutes until golden brown. Transfer to a wire rack and leave to cool before serving.
