Focaccia with Onions and Cherry Tomatoes
This is a delicious italian recipe for focaccia that you'll love! It is really easy and with some fresh salad next to it makes a perfect lunch or a light dinner. 450 g plain flour 1 sachet easy-blend yeast 1 tsp salt pinch of sugar 5 tbsp olive oil 1 onion, sliced thinly and cut into short lengths 1/2 fresh thyme leaves 6-7 cherry tomatoes cut in two coarse sea salt 1. Place the flour, yeast, salt and sugar in a bowl. Make a well in the center and pour in 250 ml lukewarm water and 1 tbsp oil. Mix to a dough and knead until smooth and elastic. 2. Place the dough in a large oiled bowl, cover with clear film and leave in a warm place until doubled in size. Turn out the dough on to a floured surface and knead lightly for 3-4 minutes. 3. After punching the dough down, knead it on a lightly floured surface for 3-4 minutes. Brush a large shallow baking pan with 1 tbsp of the oil. Place the dough in the pan, and use your fingers to press it into an even layer, about 2 cm thick. Cover the dough with a cloth, and leave to rise in a warm place for 30 minutes. Meanwhile, preheat the oven to 200°C. 4. While the focaccia is rising, heat 3 tbsp of the oil in a medium frying pan. Add the onion and cook over low heat until soft. Stir in the thyme leaves. 5. Just before baking, use your fingers to press rows of light indentations into the surface of the focaccia. Bush with the remaining oil. 6. Half the cherry tomatoes and place them on the focaccia. Spread the onion evenly over the top and sprinkle lightly with coarse salt. 7. Bake in the oven for 25 minutes or until just golden. Cut into squares or wedges and serve warm or at room temperature.
